Further in pursuit of the perfect protein pancake…

So this weekend, bolstered by the success of last week’s pancakes, I’ve made a couple of other versions, one that’s more chocolatey than last week’s; the other made with ground almonds rather than coconut flour.

The More Chocolatey Ones

Even more chocolate than last week! That is definitely no bad thing 🙂

Basically, the ingredients and method are exactly the same as last week’s pancakes, but I’ll add all the details again (hurrah for copy and paste) and highlight the differences:

Ingredients:

Pancakes

  • 20g coconut flour 
  • 15g protein powder (I used chocolate flavour)
  • 10g flaxseed
  • 1/4tsp baking powder
  • 4 egg whites (approx. 130g)
  • 1/4tsp vanilla extract
  • 45ml skimmed milk

The numbers: 289kcal, 35g protein, 12g carbs, 9g fat

“Cream”

  • 70g fat free Greek yoghurt
  • 10g cookies and cream protein powder
  • 5g Milky Way Magic Stars (broken and mixed into yoghurt); 5g to go on top 🙂
  • strawberries (to go on top)

Method:

  1. Combine the dry ingredients in one bowl and the wet ingredients in another bowl
  2. Add the wet ingredients a little at a time until the mixture is smooth
  3. Add a little coconut oil to a frying pan, and cook the pancakes as you would any other pancake!
  4. Meanwhile, mix the cookies and cream protein powder and the broken up Magic Stars with the Greek yoghurt to make the “cream”
  5. Once your pancakes are done, stack them with the “cream” in between each layer and top with more chocolate and the strawberries

The Almondy Ones

There had to be a little bit of trial and error with these ones as the dry ingredients necessitated less liquid (coconut flour is soooooo thirsty!). I think I got it right – they certainly went down well!

Ingredients:

Pancakes

  • 20g ground almonds 
  • 10g protein powder (I used vanilla flavour)
  • 10g flaxseed
  • 1/4tsp baking powder
  • 50g egg whites
  • 1/4tsp almond extract
  • 15ml skimmed milk

The numbers: 253kcal, 21g protein, 4g carbs, 16g fat

“Cream”

  • 70g fat free Greek yoghurt
  • 10g chocolate protein powder
  • strawberries
  • blueberries

Method:

  1. Combine the dry ingredients in one bowl and the wet ingredients in another bowl
  2. Add the wet ingredients a little at a time until the mixture is smooth
  3. Add a little coconut oil to a frying pan, and cook the pancakes as you would any other pancake!
  4. Meanwhile, mix the chocolate protein powder with the Greek yoghurt to make the “cream”
  5. Once your pancakes are done, stack them with the “cream” and fruit in between each layer and on top

I seem to have abandoned porridge and found a new obsession. Time to start planning next weekend’s pancakes…
